Sanuki Udon is known for its distinctive koshi — that satisfying combination of a smooth, springy texture and a pleasantly bouncy bite.


At Tamoya, our udon-making is rooted in the traditions of Kagawa, with careful attention to the balance of flour, water and salt, as well as temperature, resting time and technique.


The result is the heart of every Tamoya bowl: smooth, springy noodles made for that unmistakable Sanuki chew.

Tamoya began in Kagawa Prefecture, a place where udon is much more than a meal.

It is part of everyday life.

Since 1996, Tamoya has continued to refine its approach to authentic Sanuki Udon, drawing on the techniques and food culture of Kagawa — Japan’s udon heartland.

What started in Kagawa has since taken Tamoya beyond Japan. Now, that same dedication to authentic Sanuki Udon has arrived in Sydney.
